<strong>Ingredients</strong><br />
Chocolate cake mix<br />
3 eggs<br />
½ zucchini<br />
½ squash<br />
1 piece celery<br />
1/6 head purple cabbage</p>
<p><strong>Directions</strong><br />
Preheat ES to 300 degrees or small skillet to med/low. Mix ingredients together to a thick “brownie” consistency.  Use coconut oil to line the skillet.  Bake for 35 – 40 minutes in electric skillet or 15 to minutes in small skillet.  It will look like a pancake when cake is done.  (the cake should not click)</p>

<p><strong>Ingredients</strong><br />
pineapple cake mix<br />
3 eggs<br />
1 yellow squash, #1 cone<br />
½ cup of pineapple juice<br />
2 apples, #2 cone<br />
1 cup brown sugar<br />
½ stick of butter<br />
1 can pineapple slices<br />
cherries </p>
<p><strong>Directions</strong><br />
Preheat ES to 300 degrees. Mix ingredients together to a thick “brownie” consistency.  Spray skillet with PAM and arrange pineapple slices and cherries on bottom of the skillet as desired. Layer brown sugar evenly on top and then add the cake mix; bake for 35 – 40 minutes until done. </p>

<p><strong>Ingredients</strong><br />
2 Pkgs Frozen Blue Berries<br />
2 Pkgs Frozen Mixed Berries<br />
1 cup rolled oats<br />
¼ cup brown sugar<br />
3 tbsp cinnamon<br />
2 tbsp butter, sliced in 5</p>
<p><strong>Directions</strong><br />
Spray cold electric skillet with PAM.  Place frozen berries in skillet and scatter butter slices on top.  Mix oatmeal, cinnamon and sugar together and sprinkle on top of berries.  Cook at 275 degrees or Medium-click-low for 20 minutes.  Serve warm with ice cream or whip cream.</p>

1 cup white wine<br />
1 pkg Crimini mushrooms<br />
2 Tbp Olive Oil<br />
1 small jar capers<br />
Salt &#038; Pepper to taste</p>
<p><strong>Directions</strong><br />
Pre-heat electric skillet and brown chicken on each side-Note: chicken will stick until ready to be flipped.  Once chicken is browned, mix all remaining ingredients and pour sauce over chicken; cook on medium-click-low until done. </p>

<p><strong>Ingredients</strong><br />
1 Eggplant, sliced ¼” thick slices<br />
1 bag of spinach<br />
¼ onion<br />
1 zucchini<br />
1 Yellow Squash<br />
1 Jar Tomato sauce<br />
1 red bell pepper, sliced<br />
Cheese of Choice<br />
1 pkg pasta noodles</p>
<p><strong>Directions</strong><br />
Start with a cold roaster or electric skillet;  pour tomato sauce on bottom (about a ¼ inch of sauce) then layer by starting with spinach, then eggplant, other veggies, noodles, sauce.  Repeat to the top and add cheese and sliced bell peppers to the very top layer. Set temperature to medium (275 degrees) and let it come to a click, then turn to low. (note: you can also add cheese in between layers if desired)</p>

<p><strong>Ingredients</strong><br />
3 lbs small raw shrimp, cleaned<br />
4 large Tomatoes, seeded and diced<br />
6 limes, juiced<br />
4 lemons, juiced<br />
1 C. Cilantro leaves, chopped<br />
1/2 of a cucumber, peeled and diced<br />
1 red onion, diced<br />
Salt and pepper to taste<br />
3 large ripe avocados</p>
<p><strong>Directions</strong><br />
Lay out shrimp in the bottom of glass baking dish. Pour lemon and lime juice over them and refrigerate for 3 hours. The juice will "cook" the shrimp. Toss with remaining ingredients and refrigerate for one more hour or longer. Enjoy with tortilla chips or as a topper for grilled fish!</p>

1 1/2 cups lentils<br />
1 1/2 cups millet<br />
1 1/2 cups brown rice<br />
9 cups vegetable broth<br />
cup bread crumbs<br />
1/2 cup rolled oats<br />
1/2 cup cashews, finely chopped<br />
1 onion #2 cone<br />
1/12 tablespoons crumbled fresh sage<br />
2 stalks celery #2 cone<br />
3 cloves garlic #1 cone</p>
<p><strong>Directions</strong><br />
Combine lentils, millet, rice and water in a MP-5.  Rice 2 setting.  Combine remaining ingredients.  Bake in Electric skillet on 325 for 35 minutes.   Mix well. Transfer mixture to loaf pans and bake for 30-40 minutes;  or until lightly brown and the top is dry to the touch. </p>

3 lbs potatoes, #4 cone<br />
6 cloves garlic, #1 cone<br />
4 scallions, sliced<br />
½ cup light cream<br />
½ whole milk<br />
16oz spinach, chopped<br />
½ cup pine nuts<br />
Salt &#038; Pepper, TT<br />
16oz Cheddar Cheese, #2 cone</p>
<p><strong>Directions</strong><br />
Process the potatoes using the #4 cone.  Arrange a layer of potatoes on bottom of 7qt roaster, then layer garlic, scallions, spinach and cheese evenly over the potato layer. Pour cream and milk over the layer and repeat the process.  Make sure the top is layered with spinach, cheese and the pine nuts; season as desired with salt &#038; pepper then cook on medium-click-low until done.</p>

2 Green or Red Bell Peppers<br />
2 Onions<br />
1 pineapple<br />
Bamboo Skewers</p>
<p><strong>Directions</strong><br />
Cut the vegetables into cubes and toss with Teriyaki sauce and garlic and let stand to marinade. Slide veggies the on the skewers as desired then place prepared skewer on a preheated smokeless broiler grill and cook until done.</p>
